This makes a great meal. It's crispy, sweet, spicy, fresh. It makes a large serving and is light but filling.
Martha's Curry Chicken Salad
(1 serving)
-1 red container of my Basic Boiled Chicken Breast, diced (1 cup)
-1 purple container of red grapes, sliced (1 cup)
-1/2 green container celery, small dice (1/2 cup)
-1-2 T purple onion, teeny dice
-1/2 red container 2% Greek yogurt (about 1/3 cup)
-2 t mayonnaise
-1 t curry powder
-salt to taste
Combine and eat as is, rolled in lettuce leaf, or on top of greens. Photo shows it atop 2 green containers (2 cups) romaine.
It's also great with 1orange container of cashews on top (2 T)
