Basic Boiled Chicken Breast

I almost always have this Basic Boiled Chicken Breast on hand.  Measure cooked diced chicken using the red Portion Fix container for....

  • making chicken salad
  • as a snack
  • as a salad topping
  • in quick chicken-based curries or recipes 

Basic Boiled Chicken Breast
-boneless skinless frozen (or fresh) chicken breasts
-onion, cut into quarters
-celery stalks with leaves if possible
-bay leaf (1-2)
-seasoned salt (to taste)
-garlic powder (to taste)

(For frozen chicken breasts).  Place chicken breasts in a pot and cover with water.  Add the remaining ingredients and bring to a boil. Once it begins to boil, place a lid on the pot and reduce heat to simmer for 10 min.  Bring to boil once more.  As soon as it starts to boil, turn off the heat and leave it on the burner until it cools.  Dice and measure with your red Portion Fix container into individual servings so that it’s ready to pull from the fridge as a snack, or to add to recipes as needed.
